Cuban Sopa de Pollo
Traditional Cuban Sopa de Pollo (Chicken Soup). I find that making this homemade soup during the winter months helps keep me warm and it tastes delicious. I even make it when I'm feeling run down or need that extra boost and it does wonders.

Ingredients:
6 chicken thighs
1 medium onion, chopped
1/4 tsp. Oregano
1/4 tsp. Saffron
6 cups - water
1 cube - chicken bouillon
2 celery sticks
2 cloves garlic, minced
2 Potatoes quartered (keep the skin)
1 large carrot
1 small bag of Goya Fidelini Pasta or any fidelini pasta is fine
1/2 cup lemon juice
1 tsp Salt
1/2 tsp Pepper
Directions:
Remove the skin from the chicken thighs (can substitute with chicken breast) and sprinkle a little bit of salt on each side.
Chop onions, garlic and celery stick to preference.
In a large pot, add the water, chicken, onion, chicken bouillon, garlic and oregano.
Bring to a boil, then reduce to low, cover, and simmer for 30 mins.
Add the potatoes, celery and carrots, cover and simmer for another 30 mins, until the potatoes are tender.
Add the fidelini, saffron, lemon juice, salt and pepper and cook until the noodles are tender. Serve hot in a soup bowl
